Ingredients:

  • 3 Eggs or more
  • Yellow and red bell peppers (vegetables according to your choice)
  • 2 tablespoons milk
  • ½ cup Sweet corn
  • 1 tablespoon butter
  • 1 teaspoon Garlic powder
  • Salt and pepper
  • Bacon (optional)

Preparation:

  • Crack eggs in a bowl and whisk them with a fork until smooth.
  • Add boiled sweet corn, roughly chopped vegetables of your choice, and a little bit of milk, and whisk it again until it becomes smooth and frothy.
  • Season it with salt, black pepper, and garlic powder according to your taste.
  • Now, take a few muffin cups and grease them with butter.
  • Pour in the egg mixture and fill them up till ¾ of the way up to prevent overflow.
  • Now, add the chopped bacon to the mixture.
  • Preheat your oven to 375 degrees, and once it has preheated, pop the egg mixture into the oven and bake it for 15-20 minutes until set.
  • Your egg muffins are ready.

2. Healthy strawberry smoothie

Ingredients:

  • 1 cup of Yogurt
  • 1/2 cup of strawberries chopped
  • Honey as per your taste

Preparation:

  • Take a blender. Add in one cup of yoghurt, chopped strawberries, and honey.
  • Now blend all the ingredients to make a fine smoothie.
  • Serve chilled.

Tip: You can make a smoothie with any fruits of your choice. If you don’t have yoghurt, you can add in milk. The ratio remains the same.

3. Ham and Cheese Sandwich

Ingredients:

  • 4 slices of bread
  • 2 tablespoons of mayonnaise
  • 2 tablespoons of mustard
  • 2 tablespoons of honey
  • 6 slices of cheese
  • 6 slices of ham

Preparation:

  • Take one slice of bread and spread mayonnaise over it.
  • Now, take a small bowl of honey and mustard combined.
  • Spread the sauce prepared on another slice of bread.
  • Now, top the mayonnaise side with two slices of cheese and three slices of ham.
  • Then, take the mustard mixture and top it over the slices. 
  • Add a pan, add a little butter, melt it, and put the sandwich on the pan until it becomes golden brown on both sides.

4. Mix egg-fried rice

Ingredients:

  • 2 cups of Rice
  • 1 and ½ cup chopped vegetables (of your choice)
  • 2 Eggs
  • 2 cloves Garlic
  • ½ Onion chopped
  • 3 tablespoon butter

Preparation:

  • Heat a pan, put a dollop of butter, and add garlic and onions.
  • Saute it for some time until the onions are translucent.
  • Add in the other vegetables of your choice. Stir it for 2-3 minutes.
  • Add in salt and pepper as per your taste.
  • Now crack an egg and still it together.
  • Once the egg seems scrambled, add it to the cooked rice and saute it for another 3 minutes.
  • Mix everything properly and serve it hot.

5. Chicken salad

Ingredients:

  • 2 boneless chicken breasts
  • 1teaspoon of oregano
  • Salt and pepper
  • 5 teaspoon Olive oil
  • 4 teaspoons red wine vinegar
  • 1 tablespoon freshly chopped coriander. You can use parsley
  • 1 cucumber chopped
  • ¼ cup chopped cherry tomatoes
  • ¼ cup feta cheese
  • ½ cup black olives

Preparation:

  • Heat a grilling pan to medium to high.
  • Now, add seasoned chicken with oregano, salt, and pepper.
  • Now, cover the pan and let it cook on both sides until it becomes brown.
  • It will take about 18 minutes. After it is done, let it rest for some time.
  • In the meantime, take a bowl and make the dressing for this salad.
  • Add olive oil, red wine vinegar, and coriander leaves, and season it with salt and pepper.
  • Now, whisk them together until nicely combined.
  • Add cucumbers, lettuce, cherry tomatoes, feta cheese, and olives to a big bowl.
  • Top it with sliced chicken and drizzle the dressing on top of it.
  • Your delicious chicken salad bowl is ready.

6. Clear sweet corn egg soup

Ingredients:

  • 2 eggs
  • 1 cup of frozen corn
  • 2 cups of water
  • Salt and pepper
  • Vegetables of your choice
  • 1 teaspoon butter

Preparation:

  • Take a deep pan, add water, and boil the corn.
  • Take out the corn and keep it aside.
  • Now, take a fresh bowl of water and let it boil.
  • Add the vegetables and salt, and let them boil for 8 minutes.
  • After that, add corn and crack the eggs in the water.
  • Add the pepper and let it simmer for another 5-6 minutes.
  • Garnish it with a dollop of butter in a bowl.

DINNER RECIPES

7. Pork and veggie bowl

Ingredients:

  • 1 tablespoon of any vegetable oil
  • 1 big clove of garlic
  • 1 teaspoon of ginger
  • ½ cup minced pork
  • 1 egg
  • 1 tablespoon of sesame oil
  • 1 onion sliced
  • 1 cup of chopped carrots
  • ½ cup cabbage thinly sliced
  • ¼ cup of soya sauce
  • 1 spring onion
  • 1 tablespoon sesame seeds

Preparation:

  • Take a pan and heat it over medium flame. Add in vegetable oil, and let it heat.
  • Add garlic and ginger and cook until you can smell it, maybe for 1-2 minutes.
  • Now, add pork and cook it until it becomes brown.
  • Take out the pork from the pan and keep it aside.
  • Now, in the same pan, add the sesame oil.
  • Once it becomes hot, add in onion, carrots, and cabbage.
  • Saute it for some time, and then add soy sauce.
  • Now, put in the pork.
  • Still, put everything together and cook it for roughly 5-7 minutes.
  • Once done, take it out in a bowl and garnish it with sesame seeds and spring onions.

8. Lemon chicken wraps

Ingredients:

  • Pita bread
  • ¼ cup or 2 tablespoons of extra virgin olive oil
  • Juice of 3 lemons
  • 2 garlic cloves
  • 1 teaspoon of Italian herbs
  • Salt and pepper
  • 1 boneless chicken breast
  • ½ cup yoghurt
  • ½ teaspoon paprika
  • Hot sauce
  • Tomatoes sliced
  • Lettuce

Preparation:

  • First, marinate the chicken in a bowl with olive oil, lemon juice, Italian herbs, salt, and pepper.
  • Mix and keep them for at least 30 minutes and up to 4 hours.
  • In a large pan over medium heat, add two tablespoons of olive oil and cook the marinated chicken on both sides until it becomes golden and cooked inside (around 8 minutes on each side).
  • Once done, leave it aside and make the sauce.
  • Add the yoghurt, hot sauce, lemon juice, and paprika to another bowl.
  • Mix it to make a sauce-like consistency.
  • Take a pita bread, assemble lettuce, tomatoes, and chicken slices, and drizzle it with the sauce prepared.
  • Warp it and enjoy the tasty lemon chicken wrap.
